- You need a small bowl (not metal, because you're going to put it in the microwave) and a spoon or a long pronged fork for lightly whisking the mixture.
- 4 tbsp unsalted butter
- 4 tbsp light brown sugar (lightly packed)
- Just a SPRINKLE (not even enough to call a sprinkle) of salt to give it the bitterness of the caramel.
In ANOTHER small (glass) bowl, melt your butter on high for 10 seconds. After it's melted, get the OTHER small bowl you were suppose to have for the prep step. :-) Dump the butter, brown sugar and salt into the bowl and stir until sticky.
THEN, insert the bowl with the half made caramel into the microwave for 1-2 minutes on high. If it bubbles, it's not like oatmeal, it's NOT going to explode and cause a big mess. Let it bubble because that's the "baking" process!
Finally, PLEASE USE POTHOLDERS!!!!!!!!!!! This dish is INCREDIBLY hot!!! It will burn you if you used a glass dish, as I did when I made it myself and it hurt!
Now you may enjoy your cooled caramel on whatever you like.
Best on Baked Sweet Potatoes!
